
Salmon Skewers

The simplicity of these skewers will be much appreciated when preparing a lavish barbecue for friends and family. Leave the salmon to rest in the marinade long before your guests arrive.Time and servings

Ingredients
- 540 g of salmon fillets
- 5 g of fresh basil, chopped
- 5 g of fresh thyme, chopped
- 70 ml of olive oil
- 1 lemon, 25ml of juice, 5g of peel
- 5 g of garlic, crushed
- 5 g of poppy seeds
- 12 g of parsley, finely chopped
Method
Step 1
For the marinade, mix together the basil, thyme, parsley, olive oil, salt, black pepper, lemon juice, lemon peel, garlic and poppy seeds in a bowl.Step 2
Dice the salmon into 1 ½ inch cubes and transfer to a oven-proof dish.Step 3
Pour over the marinade and leave for at least 30 minutes.Step 4
Arrange the marinated salmon on the skewers, around four pieces per skewer.Step 5
Place directly onto the barbecue and cook for about 2 minutes on each side (alternatively you could cook the salmon under the grill which will take a little longer). While cooking, keep brushing the salmon with the marinade to keep it moist.
