
Salmon Teriyaki with Sweet Potato Mash

Ingredients
- 0.5 bunch of coriander
- 1 clove of garlic
- 1 dash of butter
- 1 handful of flat leaf parsley
- 1 pinch of salt
- 2 tbsp of light soy sauce
- 1 tbsp of pure clear honey
- 1 tsp of root ginger
- 8 sweet potatoes
- 2 tbsp of mild & light olive oil
- 4 salmon fillets
- 2 tsp of chopped garlic
Method
Step 1
Pre-heat your oven to 200ºC. Mix all the ingredients apart from the salmon together in a bowl. Add the salmon fillets and leave to marinade for 30 minutes.Step 2
Meanwhile, peel and chop the sweet potatoes and place in boiling water, for approximately 7 minutes. While the sweet potato is cooking, transfer the marinated salmon to a baking dish and pop into the hot oven for approximately 10 minutes.Step 3
Drain potatoes, add the butter, olive oil, crushed garlic, seasoning and mash together. Then stir in the finely chopped parsley. Serve the salmon on top of the potato with a drizzle of the marinade round the edge to finish.Step 4
Tip: you could also serve the salmon with stir-fry vegetables, or over rice or quinoa.
