This dish combines oily fish and fresh green vegetables for a healthy and tasty supper dish.

Ingredients

  • 8 vine tomatoes
  • 1 tsp of black mustard seeds
  • 2 tbsp of olive oil
  • 0.5 lemon, juiced and zest
  • 0.5 tsp of cumin
  • 4 salmon fillets
  • 200 g of green beans, trimmed
  • 200 g of tender stem broccoli
  • 1 drizzle of balsamic glaze, (or Balsamic Vinegar, reduced)

Method

  • Step 1

    Place the mustard seeds in a heavy nonstick frying pan and cook over a moderate heat for about 4-5 minutes until the seeds start to pop. Tip them into a small bowl and add the olive oil, lemon zest and juice, and cumin, mix and set to one side.
  • Step 2

    Place the salmon fillets in the hot frying pan over a moderate heat and cook for 4-5 minutes each side, until cooked through.
  • Step 3

    Steam the beans and broccoli for 2-3 minutes until just tender.
  • Step 4

    While the salmon is cooking, place the tomatoes on a baking tray and cook in the preheated oven for about 8 minutes until they are softened.
  • Step 5

    Toss the beans and broccoli in the mustard seed dressing. Drizzle the tomatoes with a little balsamic glaze and serve with the salmon, beans and broccoli.
