
Salmon with Steamed Beans and Broccoli with Mustard Dressing

Ingredients
- 8 vine tomatoes
- 1 tsp of black mustard seeds
- 2 tbsp of olive oil
- 0.5 lemon, juiced and zest
- 0.5 tsp of cumin
- 4 salmon fillets
- 200 g of green beans, trimmed
- 200 g of tender stem broccoli
- 1 drizzle of balsamic glaze, (or Balsamic Vinegar, reduced)
Method
Step 1
Place the mustard seeds in a heavy nonstick frying pan and cook over a moderate heat for about 4-5 minutes until the seeds start to pop. Tip them into a small bowl and add the olive oil, lemon zest and juice, and cumin, mix and set to one side.Step 2
Place the salmon fillets in the hot frying pan over a moderate heat and cook for 4-5 minutes each side, until cooked through.Step 3
Steam the beans and broccoli for 2-3 minutes until just tender.Step 4
While the salmon is cooking, place the tomatoes on a baking tray and cook in the preheated oven for about 8 minutes until they are softened.Step 5
Toss the beans and broccoli in the mustard seed dressing. Drizzle the tomatoes with a little balsamic glaze and serve with the salmon, beans and broccoli.
