Having a simple sauce up your sleeve to zhuzh things up can be a saving grace. And this Salsa Verde from cook and hosting influencer Saff Michaelis does just that for all kinds of dishes, from roast chicken to sandwiches. “To make it your own, try adding anchovies for savoury depth, cornichons for crunch, breadcrumbs for texture or swap in other soft herbs, such as basil, chives or tarragon,” she says.Time and servings

Ingredients
- 50g parsley, finely chopped
- 1 garlic clove, crushed
- 1 tsp Dijon mustard
- ½ lemon, juiced
- 1 tbsp capers
- 1 sprinkle sea salt
- 60ml (approx.) olive oil
Method
Step 1
In a bowl, combine the parsley, garlic, mustard, lemon juice, capers and sea salt.Step 2
Stir in enough olive oil to loosen. The salsa verde will keep in a sealed container in the fridge for up to 1 week.
