
Salted Chocolate and Peanut Butter Fudge

The lovely smooth texture of this fudge is down
to the liquid glucose, a lesser-used but inexpensive wonder ingredient.Time and servings

Ingredients
- 200 g of dark chocolate, for the chocolate fudge
- 250 g of smooth or crunchy peanut butter (unsweetened), for the peanut butter fudge
- 1 pinch of sea salt, plus extra for sprinkling
- 200 g of double cream, for the chocolate fudge
- 300 g of caster sugar, for the chocolate fudge and 150g for the peanut butter fudge
- 170 ml of liquid glucose, for the chocolate fudge
- 60 g of butter, for the chocolate fudge, plus 230g for the peanut butter fudge
- 1 tsp of vanilla extract, for the peanut butter fudge
Method
Step 1
Prepare a tin 26cm by 18cm with non-stick paper.Step 2
First make the chocolate fudge by melting the cream, sugar and glucose in a pan. Use a cooking thermometer to measure when it gets to 120°C, then add the butter, stir and let it reach 120°C again. Remove from the heat, add the chocolate and stir to a silky texture.Step 3
Pour into the tray, sprinkle with a pinch of sea salt and chill in the fridge.Step 4
Now make the peanut butter fudge by melting the butter, peanut butter and vanilla extract together. Then add the sugar and stir until dissolved.Step 5
Remove the chocolate fudge from the fridge and pour the peanut butter fudge over the top, sprinkle with extra sea salt and place in the fridge again to set for 4-6 hrs.Step 6
Once set, remove and cut up into 3cm squares. Pop these into a gift box or jar, we used Tala Glass Clip Top Storage 380ml. Best kept refrigerated, eat within 3 weeks.
