
Sardine Rillettes

Classic French rillettes can be made from meat or fish. This super-quick version uses a handy
tin of sardines, mixed with soft cheese to create a creamy concoction that can be whipped
up at a moment’s notice. Lemon zest and chives give a zippy lift. The Sardine Rillettes are
the brainchild of Bake Off star, cook and author Manon Lagrève, who suggests serving them
either as a starter or as a nibble with an aperitif – you’ll have leftovers, so why not try both?Time and servings

Ingredients
- 1 (120g) tin sardines in oil, drained
- 50g soft cheese
- ½ tbsp chopped chives, plus extra to finish
- ¼ lemon, zested
- 1 pinch pinch sea salt flakes
- 1 baguette, sliced and toasted (or crostini), to serve (optional)
Method
Step 1
Put the sardines in a bowl and roughly mash with a fork.Step 2
Add the soft cheese, chives, lemon zest and sea salt; continue to mash until combined.Step 3
Serve sprinkled with a few extra chives, with baguette slices or crostini for spreading over, if you like. Leftovers will keep chilled in an airtight container for up to 3 days.
