
Sardines & Roasted Red Peppers on Toast

Try this quick and heart-healthy recipe as brunch, lunch or a lazy midweek dinner. Tinned sardines are given a makeover with sweet red peppers, red chilli, paprika and herbs, then piled generously onto toasted sourdough. Packed with omega-3, sardines are an oily fish with a fantastic nutritional value.Time and servings

Ingredients
- 1 roasted red pepper, from a jar
- 1 lemon, juice
- 1 tbsp of olive oil
- 1 clove of garlic, chopped
- 0.5 red chilli, finely chopped
- 1 handful of fresh parsley
- 1 pinch of smoked paprika
- 2 slices of sourdough bread
- 135 g of tinned sardines
Method
Step 1
Roughly chop the red pepper and place in a bowl with the lemon juice, olive oil, garlic, red chilli and parsley. Add a pinch of smoked paprika and season with salt and black pepper.Step 2
Mix it all together and set aside while you toast two rounds of sourdough bread.Step 3
When the toast is ready, top with the pepper mixture (retaining the juice) and the sardines.Step 4
Drizzle over a little of the juice and serve.
