Macaroni & Cheese needs no introduction to anyone. It's amazingly simple, comforting and can be fancied up or eaten in its most basic form.Time and servings

Ingredients
- 1 tsp of ground nutmeg
- 0.25 tsp of paprika
- 3 tbsp of flour
- 2 sprigs of rosemary
- 2 cups of macaroni
- 8 sausages
- 3 tbsp of breadcrumbs
- 25 ml of olive oil, 10ml for the breadcrumbs and 25ml for frying
- 1 cup of frozen spinach, thawed
- 1.75 cups of milk
- 3 cups of cheddar cheese, grated (or use vegan cheese)
Method
Step 1
Preheat oven at 180 C.Step 2
Mix breadcrumbs, oil and paprika in a small bowl and set aside.Step 3
Drain spinach and set aside. Ensure that excess moisture is drained out.Step 4
Heat 1½ cups of milk in a thick based pot over medium heat and allow to steam.Step 5
Whisk remaining ¼ cup milk and flour in a small bowl until smooth and add to the hot milk. Cook for 2-3 minutes and whisk repeatedly. Remove from heat and stir in cheddar cheese until melted.Step 6
Add in nutmeg, rosemary, salt and pepper.Step 7
Cook pasta for 5 minutes.Step 8
Drain and add to cheese sauce. Mix well.Step 9
