
Sausage Traybake

This sausage traybake will save you time on cooking and washing up. A single baking tray is loaded up with juicy pork sausages, ripe cherry tomatoes, red and yellow peppers, courgettes, red onions, creamy butter beans and Tenderstem broccoli. Everything is flavoured delicately with sage, rosemary and garlic and roasted together until fragrant and delicious. You can substitute any of the veg listed here with what you have in your fridge that needs using up, and you can do the same with the herbs. Add in a glug of white wine for an extra kick of flavour, if you like.Time and servings

Ingredients
- 8 pork sausages
- 1 red pepper, halved, roughly chopped
- 1 yellow pepper, halved, roughly chopped
- 2 small courgettes, cut into ½cm-thick coins
- 1 red onion, roughly chopped
- 200 g of tenderstem broccoli
- 200 g of cherry tomatoes on the vine
- 1 tin of 400g butter beans, drained and rinsed
- 2 tbsp of olive oil
- 2 tsp of sea salt
- 1 tsp of coarse ground black pepper
- 1 tsp of smoked paprika
- 5 sage leaves, roughly chopped
- 2 rosemary sprigs, leaves only, roughly chopped
- 4 garlic cloves, crushed or grated
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. On a large baking tray, toss together the sausages, red and yellow peppers, courgettes, onion, broccoli, tomatoes and butter beans, then drizzle over the olive oil, season the sea salt, coarsely ground black pepper and the smoked paprika.Step 2
Dot over the sage, rosemary and garlic and mix together well, then roast in the oven for 40 mins until the sausages have browned and are cooked through. Cut one in half to check if needed.Step 3
Remove from the oven and serve immediately with a hunk of warm, crusty bread, if you like.
