
Secret Sauce

We’ve called this our Secret Sauce as it’s jam packed with veg, delicious as it is and creates a fantastic base for so many other dishes. We like to serve a portion tossed through pasta for dinner then pack up and freeze leftovers ready to be stirred through homemade baked beans, baked with fish fillets or added to mince for a speedy bolognese.Time and servings

Ingredients
- 2 tbsp olive oil
- 500g bag frozen sofrito mix
- 4 x 250g vine tomatoes, quartered
- 2 red peppers, chopped
- 3 basil sprigs, plus extra for serving
- 1 parmesan rind (optional), plus grated for serving
Method
Step 1
Set a large pan over a medium heat and add the oil.Step 2
Tip in the frozen sofrito mix with a pinch of salt and cook for 10 mins, until softened.Step 3
Add the tomatoes, peppers, basil sprigs and parmesan rind, if using, then partially cover and simmer for 1 hr or until thickened to a sauce consistency, stirring occasionally.Step 4
Remove the basil sprigs and parmesan rind then transfer to a blender, or use a stick blender, and whizz until smooth. Decant into freezerproof containers, allow to cool then cover and freeze for up for 3 months.
