Swap traditional pastry for a seeded tortilla in this clever, high-protein family quiche from M&S. Ingredients

  • 2 tsp light oil, plus extra to brushing
  • 3 M&S Seeded Tortilla Wraps
  • 3 tbsp green pesto
  • 2 leeks, thinly sliced
  • 4 mixed free-range eggs, beaten
  • 50ml whole milk
  • 150g British frozen garden peas, defrosted
  • 40g mature cheddar, grated
  • 75g cherry tomatoes, halved
  • Green salad, to serve, optional

Method

  • Step 1

    Heat the oven to 200°C/ 180°C fan/ gas 6. Lightly brush a 20cm springform cake tin with oil. Press the wraps firmly into the bottom and up the sides of the tin, overlapping them slightly to achieve an even coverage. Spoon 2 tbsp of the pesto into the base and spread evenly.
  • Step 2

    Meanwhile, warm the oil in a large pan over a medium heat and add the leeks. Season with a pinch of salt and cook for 5–7 mins until softened. Spoon half of the cooked leeks onto the base of the lined tin, and transfer the remaining half to a large bowl.
  • Step 3

    Add the eggs and milk to the bowl with the leeks then whisk to combine. Gently stir in the peas and most of the cheddar, reserving a small handful of the cheese for the topping.
  • Step 4

    Season the mixture well, then pour it into the tortilla base. Arrange the halved cherry tomatoes over the top, sprinkle with the reserved chedda, and dot the remaining pesto over the surface in tsps.
  • Step 5

    Bake for 25–30 mins until the middle is just set, covering the top with foil if the tortilla edges begin browning too quickly. Allow the quiche to cool for 10 mins in the tin before releasing it. Serve with a green salad, if you like.
