
Sesame Broccoli Noodles

This vegetarian noodle dish is sure to put a smile on your face. It's packed with crunchy broccoli, smoky tofu, umami-packed soy sauce and earthy tahini. What’s not to love? It's another great creation by our friends at MOB Kitchen and makes for a simple and satisfying midweek meal for four, ready in an hour. Time and servings

Ingredients
- 225 g of smoked tofu
- 1 head broccoli, florets separated and remaining stalks finely chopped
- 3 tbsp of olive oil
- 3 tbsp of dark soy sauce
- 3 tbsp of tahini
- 1 bunch of spring onions, finely chopped, whites and greens separated
- 2 red chillies, 1 finely chopped, 1 sliced
- 5 garlic cloves, minced
- 500 g of straight to wok egg noodles
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 5. Crumble the tofu into a large tray, add in the florets and toss with olive oil and some salt. Bake in the oven for 30 mins until the tofu is crisp and the broccoli is charred.Step 2
Mix the soy sauce, tahini and 2 tbsp water in a bowl.Step 3
Heat a wok until smoking and add a big glug of oil. Fry the broccoli stalks, the finely sliced whites of the spring onions, and chopped red chilli. Cook for 2 mins until they are lightly browned and soft. Add in the garlic and cook for 30 secs until fragrant.Step 4
Pour in the sauce along with the egg noodles and toss well. Add in the charred broccoli and crispy tofu before giving it another good mix. Finish with the sliced chilli and spring onion greens to serve.
