Shredded Ham, Greens and Cannellini Bean Soup

If gammon is part of your festive line-up, chances are you’ll have some leftover after the big day. This soup is a lovely warming way to use it. Filled with greens and beans, it's not only hearty but nutritious too – making it an ideal post-celebration meal if you've indulged in lots of treats. You can rustle it up in just 25 minutes.

Ingredients

  • 1 onion, finely sliced
  • 1 squeeze of lemon
  • 1 heaped tbsp of parmesan
  • 1 drizzle of olive oil
  • 4 garlic cloves, grated
  • 1.5 tbsp of roasting herbs (such as sage, thyme or rosemary), finely chopped
  • 2 400g tins cannellini beans, drained and rinsed
  • 200 g of cooked gammon, shredded
  • 150 g of green vegetables (such as kale, cabbage, spring greens, spinach), roughly chopped
  • 1.5 litres of chicken stock

Method

  • Step 1

    Put the onion in a large saucepan over a medium heat with a drizzle of oil, until soft and slightly golden.
  • Step 2

    Add the garlic and herbs. Season and add in one tin of beans. Mash slightly and add in the other tin and the stock. Simmer for 10 mins.
  • Step 3

    Add the ham and greens and cook for 2-3 mins.
  • Step 4

    Squeeze in some lemon juice, top with parmesan and serve.
