
Shredded Ham, Greens and Cannellini Bean Soup

If gammon is part of your festive line-up, chances are you’ll have some leftover after the big day. This soup is a lovely warming way to use it. Filled with greens and beans, it's not only hearty but nutritious too – making it an ideal post-celebration meal if you've indulged in lots of treats. You can rustle it up in just 25 minutes. Ingredients
- 1 onion, finely sliced
- 1 squeeze of lemon
- 1 heaped tbsp of parmesan
- 1 drizzle of olive oil
- 4 garlic cloves, grated
- 1.5 tbsp of roasting herbs (such as sage, thyme or rosemary), finely chopped
- 2 400g tins cannellini beans, drained and rinsed
- 200 g of cooked gammon, shredded
- 150 g of green vegetables (such as kale, cabbage, spring greens, spinach), roughly chopped
- 1.5 litres of chicken stock
Method
Step 1
Put the onion in a large saucepan over a medium heat with a drizzle of oil, until soft and slightly golden.Step 2
Add the garlic and herbs. Season and add in one tin of beans. Mash slightly and add in the other tin and the stock. Simmer for 10 mins.Step 3
Add the ham and greens and cook for 2-3 mins.Step 4
Squeeze in some lemon juice, top with parmesan and serve.
