
Sicilian Potato Salad

Ingredients
- 750 g of new potatoes
- 6 sundried tomatoes, chopped
- 1 tbsp of capers
- 1 tbsp of pitted black olives, drained and chopped
- 1 pinch of chilli flakes
- 1 lemon, zested (plus a little of the juice)
- 1 handful of fresh parsley
- 1 handful of fresh basil
- 4.5 tbsp of extra virgin olive oil
Method
Step 1
Cook the new potatoes in boiling water until tender (about 10 mins).Step 2
Meanwhile mix dressing ingredients together and season.Step 3
When the potatoes are done, drain and tip back in the pan, halving any large ones.Step 4
Pour the dressing over while potatoes are still warm, mix well and serve.
