Ingredients

  • 1 lemongrass stalk, chopped
  • 2 shallots, chopped
  • 4 red chillies, chopped
  • 4 garlic cloves, chopped
  • 2 lime leaves
  • 1 tsp sea salt
  • 5 tbsp vegetable oil
  • ½ tbsp dark soy sauce
  • 1 tsp brown sugar

Method

  • Step 1

    Blitz the lemongrass, shallots, chillies, garlic, lime leaves, sea salt and oil in a food processor until smooth.
  • Step 2

    Cook in a pan over a low heat for 10 mins, stirring now and then. Add the soy sauce and sugar; cook for 5 mins until jammy. Cool. Store chilled for 1-2 weeks.
