Ingredients
- 1 lemongrass stalk, chopped
- 2 shallots, chopped
- 4 red chillies, chopped
- 4 garlic cloves, chopped
- 2 lime leaves
- 1 tsp sea salt
- 5 tbsp vegetable oil
- ½ tbsp dark soy sauce
- 1 tsp brown sugar
Method
Step 1
Blitz the lemongrass, shallots, chillies, garlic, lime leaves, sea salt and oil in a food processor until smooth.Step 2
Cook in a pan over a low heat for 10 mins, stirring now and then. Add the soy sauce and sugar; cook for 5 mins until jammy. Cool. Store chilled for 1-2 weeks.
