Simple sugar cookies

These easy sugar cookies are quick to bake and fun to make using cookie cutters of your choice. Made with basic baking ingredients including butter, eggs, brown sugar and flour, the cookies also call for vanilla extract to enhance the other flavours. A home baking classic, these snappy cookies will be a hit with kids and adults alike. Try using different shapes of cookie cutters to mix things up, and let your creativity run free when it comes to decorating.

Ingredients

  • 5 drops of food colouring, to decorate
  • 200 g of unsalted butter, softened
  • 100 g of caster sugar
  • 100 g of soft brown sugar
  • 1 large egg, beaten
  • 1 tsp of vanilla extract
  • 350 g of plain flour, plus extra for dusting
  • 1 tsp of baking powder
  • 100 g of dark chocolate chips, optional
  • 150 g of icing sugar, to decorate
  • 1 sprinkles, to decorate

Method

  • Step 1

    Preheat the oven to 190°C/170°C fan/gas 5. Grease and line 2 baking trays with greaseproof paper. Cream the butter and caster sugar in a large bowl for 3-4 mins until light and soft. Add the brown sugar and beat for a further 2 mins until fluffy. Pour in the egg and vanilla extract and beat to combine. Sift the flour and baking powder into the cookie dough and mix to fully incorporate. Add the chocolate chips if you are using and briefly beat again. Then transfer the dough to the fridge and chill for 15 mins.
  • Step 2

    Take the cookie dough out of the fridge and bring it together with your hands into a ball of dough. Roll out onto a lightly floured surface to approx 1cm thickness. Cut out using your desired cutters then carefully transfer to your prepared baking trays, leaving space between each cookie. Alternatively, roll the dough into equal sized balls (approx 50g each) and spread out over the baking trays.
  • Step 3

    Bake in the oven for 8-10 mins until golden but slightly firm on top.
  • Step 4

    Take the cookies out of the oven and leave for 5 mins before transferring to a cooling rack for 15 mins to cool completely.
  • Step 5

    Meanwhile, make the icing. Do this by adding the sifted icing sugar to a large bowl, then mix in 2-3 tbsp cold water to create a smooth thick mixture. Stir in the desired food colouring.
  • Step 6

    Finally, either using a piping bag or a spoon, drizzle the icing over the cookies in whichever pattern you prefer. Finish with sprinkles scattered on top, or with any other toppings you want. Leave to sit for 10 mins before serving.
