
Slow Cooked Spiced Red Cabbage

Flavourful, versatile and simply gorgeous to look at, red cabbage is the perfect festive side dish. As well as Christmassy spices, try adding carraway seeds, orange or honey for extra zing. For more richness, mix in some butter or goose fat after cooking and to make it meatier, pancetta and bacon are great additions. To keep it simple, take a leaf out of Mary Berry's book and just add redcurrant jelly, apples, vinegar and sugar. Ingredients
- 1 red cabbage, outer leaves removed, quartered, core removed and finely chopped
- 1 red onion, finely chopped
- 1 large apple, cored and finely chopped
- 50 g of butter
- 0.25 tsp of ground nutmeg
- 0.25 tsp of ground cinnamon
- 3 tbsp of muscovado sugar
- 5 tbsp of balsamic vinegar
- 1 large pinch of salt
- 1 pinch of ground black pepper
- 0.25 tsp of ground cloves
Method
Step 1
Preheat oven to 150°C/130°C fan/gas 2 and place the butter in a large, lidded casserole dish and leave to melt in the oven as it heats.Step 2
While the oven heats, prepare and chop the red cabbage, red onion and apple.Step 3
Remove the casserole dish from the oven. Add the cabbage, onion and apple, sprinkle over ground cloves, nutmeg and cinnamon, muscovado sugar and balsamic vinegar. Season with salt and pepper and stir well to coat.Step 4
Place the lid on the dish and return to the oven to cook on a very low heat for around 2 hrs, stirring just once or twice during cooking.
