Use this clever recipe from family cook Claudine Boulstridge for a full English prepared in your slow cooker. It’s the perfect way to serve someone an impressive lazy brunch or brinner. Simply pop everything in the slow cooker first thing in the morning and let the Mother’s Day magic happen. Ingredients

  • 4 sausages
  • 3 tbsp of whole milk or any of your choice
  • 2 tbsp of double cream
  • 6 rashers of bacon (or turkey bacon), rolled up into tubes
  • 3 medium eggs
  • 8 cherry tomatoes, halved
  • 2 tsp of olive oil
  • 1 tsp of unsalted butter, softened
  • 1 large handful of spinach
  • 8 button mushrooms, quartered
  • 0.5 tsp of dried oregano
  • 1 (400g) tin baked beans

Method

  • Step 1

    Place the sausages and bacon, both standing upright, in two separate mugs.
  • Step 2

    Crack the eggs into another mug, add the milk, 1 tbsp of the cream, butter, season to taste and mix well.
  • Step 3

    In another mug add the tomatoes along with 1 tsp olive oil, oregano and a pinch of salt.
  • Step 4

    Tip ¾ of the baked beans into another mug.
  • Step 5

    Add the spinach to another mug along with remaining cream.
  • Step 6

    Add the mushrooms in another mug along with the remaining olive oil. If you’re short on space, you can put the spinach and mushrooms together in a mug.
  • Step 7

    Place all the mugs in the slow cooker. Pop it on first thing in the morning for a lazy brunch or brinner.
