
Slow Cooker Pulled Smokey Chicken

This smokey slow cooker pulled chicken is a deliciously easy, minimal-fuss midweek meal. Simply get it on at lunchtime and look forward to a versatile supper in the evening. Pile it onto toasted brioche buns, layer it up in tacos with a tangy slaw or serve it on a bed of rice with your favourite veg.Time and servings

Ingredients
- 1 tin of 400g chopped tomatoes
- 100 ml of barbecue sauce
- 2 tsp of chipotle paste
- 1 tsp of apple cider vinegar
- 1 tsp of sweet smoked paprika
- 1 tsp of garlic granules
- 1 splash of worcestershire sauce
- 1 lime, zested and juiced
- 1 onion, thinly sliced
- 6 chicken thighs, skinless and boneless
- 1 tbsp of coriander, chopped, for serving
- 1 tbsp of crème fraîche
Method
Step 1
In a bowl, mix together the chopped tomatoes, barbecue sauce, chipotle paste, vinegar, paprika, garlic granules, Worcestershire sauce and lime zest. Stir in the onion and chicken thighs and place the whole lot in a slow cooker for 4-6 hours, depending on how much time you have. Cook for 4 hours on a higher setting or for 6 hours on the lowest setting.Step 2
Shred the chicken with two forks (it should literally just fall apart), squeeze in the lime juice and serve with a sprinkle of fresh coriander and some crème fraîche, if you like.
