
Smacked Cucumber Salad

Smacked cucumber salad is as simple (and intriguing) as it sounds. Cucumber pickles are popular in a variety of Asian cuisines because they’re the perfect side dish to add extra ‘crunch’ and flavour to a meal. Smashed cucumber is doused with a quick, spicy pickling liquor made from rice vinegar, chilli oil, soy sauce, fish sauce, chilli flakes and sesame seeds. Ingredients
- 4 tbsp of rice vinegar
- 3 tbsp of caster sugar
- 2 tbsp of soy sauce
- 1 tsp of fish sauce
- 2 tbsp of chilli oil
- 2 tsp of sesame seeds
- 1 pinch of chilli flakes
- 2 cucumbers, approx. 450g each, ends trimmed
Method
Step 1
In a medium bowl, combine the rice vinegar, caster sugar, soy sauce, fish sauce, chilli oil, sesame seeds and chilli flakes.Step 2
Wash the cucumbers under cold water and pat dry. Use a rolling pin to smack the cucumbers on a chopping board until they split. Cut the cucumber into bite-sized pieces (approx. 2-3cm) and transfer them from the cutting board to the bowl of marinade. Stir to combine well and season with salt, to taste, if needed. Cover and marinate for a minimum of 30 mins but up to 3 days for a more intense flavour. Stir regularly during the marinating time to ensure an even coating.
