
Smashed Avocado Toast with Balsamic-roasted Cherry Tomatoes

This easy smashed avocado on toast recipe is given some extra sparkle with the addition of balsamic-roasted cherry tomatoes. Pile the smashed avo and glossy roasted tomatoes onto a thick slice of sourdough toast and top with a fried egg or soft boiled egg, if you like.Time and servings

Ingredients
- 335 g of cherry tomatoes, halved
- 0.5 red onion, thinly sliced
- 2 tsp of balsamic glaze
- 1 tbsp of olive oil
- 0.5 tsp of chilli flakes
- 2 large avocados
- 1 tsp of lemon juice, plus extra to serve
- 1 tsp of lime juice
- 1 pinch of sea salt
- 4 slices of sourdough bread, toasted
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. In a medium bowl, combine the cherry tomatoes, red onion, balsamic glaze, olive oil, chilli flakes and a generous pinch of salt and pepper. Transfer to a deep baking tray and roast in the oven for 20 mins. After 15 mins, make a start on the smashed avocado.Step 2
Halve the ripe avocados and scoop out the flesh into a bowl. Mash with a fork until your desired consistency is achieved, then add the lemon and lime juice and season with sea salt and black pepper to taste. Spread the smashed avocado onto 4 thick slices of toasted sourdough, top with a generous spoonful of the roasted cherry tomatoes and finish with a gentle squeeze of lemon juice if desired.
