
Smashed Broccoli

Smashing the florets creates lots of extra surface area for maximum crispiness in the oven. It's a real crowd-pleaser.

Ingredients
- 1 broccoli head, cut into florets
- 50g parmesan (or vegetarian Italian hard cheese), finely grated
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Bring a large pan of salted water to the boil and cook the broccoli florets for 3-4 mins until just tender. Drain well.Step 2
Line a large baking tray with baking parchment. Sprinkle half the parmesan evenly over the parchment.Step 3
Arrange the drained broccoli florets on the tray, on top of the parmesan, leaving a little space between each one. Use the flat bottom of a glass or a jar to firmly press down on each floret, smashing it flat.Step 4
Drizzle the smashed broccoli with sprinkle over the remaining parmesan. Season with salt and pepper.Step 5
Roast for 10-15 mins, or until the edges are crisp and the parmesan is golden and bubbling. Serve immediately.
