
Smashed Chickpeas and Pitta

This is a kind of rough and ready houmous that you can make in moments by hand, for when you don’t want to get the blender out. It's even more delicious the next day too, meaning it works well for lunches that you can prep the night before. Middle Eastern spice mix za'atar adds some real punch in terms of flavour. Ingredients
- 2 wholemeal pitta, toasted and cut into triangles
- 400 g of chickpeas, drained, rinsed, patted dry
- 3 tbsp of extra virgin olive oil
- 1 handful of coriander, finely chopped
- 1 spring onion, finely chopped
- 1 tbsp of lemon juice
- 2 tsp of za’atar
Method
Step 1
Pop the pitta in the toaster, and while it toasts roughly mash the chickpeas using a potato masher, leaving some whole chickpeas.Step 2
Stir through the oil, coriander, spring onion, lemon juice and za’atar, and season to taste.Step 3
When the pitta is cool enough, cut into wedges to scoop up the chickpeas and serve, or box up for later.
