
Smashed Cucumber & Sesame Salad

Ingredients
- 1 tsp of sesame seeds
- 1 clove of garlic, crushed
- 1 tbsp of toasted sesame oil
- 1 chilli flakes
- 2 cucumbers
- 1 bunch of spring onions
- 1 tbsp of rice wine vinegar
- 1 tbsp of mirin
Method
Step 1
Top and tail the cucumbers and cut them in half through the middle. Then cut each half into quarters lengthways.Step 2
Using the palm of your hand, press down quite hard on the cucumber pieces until the seeds break away and you feel the flesh soften. Chop into bite size pieces and place in a mixing bowl, discarding the seeds.Step 3
Add the garlic, spring onions, sesame oil, vinegar, mirin and sesame seeds. Mix well.Step 4
Add a pinch of sea salt and mix again.Step 5
Serve with a sprinkle of chilli flakes over the top.
