
Smashed Lamb Burgers with Cauliflower and Chickpea Mash

For weeknight burgers with a difference, try these Smashed Lamb Burgers with Cauliflower and Chickpea Mash. The mash is flavoured with citrus and harissa to get tongues tingling and contains 2 of your 5 a day. Finish with a drizzle of mint sauce and tangy gherkins, and dive in. Time and servings

Ingredients
- 2 garlic cloves, finely chopped
- 2 tbsp olive oil
- 2 tins (400g) chickpeas
- 1 (250g) pack cauliflower rice
- 4 Tariq Halal Lamb and Mutton Burgers
- 2 tbsp greek yoghurt, plus extra for drizzling
- 2 tbsp rose harissa paste
- 0.5 lemon, for squeezing
- 4 tsp mint sauce
- 3 pickled cucumber spears with dill, sliced
Method
Step 1
In a pan, gently cook the garlic in 1 tbsp olive oil, stirring, for 1 min. Add the chickpeas, plus the water from 1 tin, and the cauliflower rice. Bring to a simmer, cover and cook for 10 mins.Step 2
Break each defrosted burger into 4 pieces; fry in the remaining 1 tbsp oil for 3 mins on each side until cooked through.Step 3
Mash the chickpea mixture and stir in the yoghurt, harissa paste and a squeeze of lemon. Serve with the burgers, a drizzle of mint sauce and the sliced cucumber spears, plus extra yoghurt drizzled over.
