
Smoked Mackerel & Sweet Potato Cakes

Ingredients
- 1 tbsp of plain flour
- 100 g of green beans, to serve
- 2 tbsp of fresh coriander, chopped
- 250 g of smoked mackerel
- 1 drizzle of olive oil, for drizzling
- 1 lemon
- 250 g of potatoes, to serve
- 400 g of sweet potato
Method
Step 1
Preheat the oven to 190°C/Gas 5. Peel the sweet potatoes and then grate into a bowl. Remove the skin from the smoked mackerel and discard then flake the fish into the sweet potatoes.Step 2
Add the zest of the whole lemon and 1 tbsp of the juice along with the chopped coriander, mix thoroughly. Sprinkle over the flour and stir until all incorporated.Step 3
With damp hands shape the mixture into 8 cakes and place on a non stick baking tray. Bake in the preheated oven for 20-25 minutes until golden. Serve with green beans and potatoes of your choice.
