
Smoked Mackerel and Avocado Salad

This throw-together salad makes the ideal, thrifty midweek dinner. There's no cooking involved at all, and you'll only need to spend 15 minutes in the kitchen to put it together. Filled with beans, avocado, fish and mango, it's a filling salad that's especially great for warm summer evenings when you want something nutritious and satisfying without any fuss. Ingredients
- 4 tbsp of extra virgin olive oil
- 2 tbsp of white wine vinegar or cider vinegar
- 0.5 tsp of honey or caster sugar
- 1 small bunch of coriander, leaves and stalks separated and both finely chopped
- 300 g of peppered mackerel fillets, skin removed and broken into large flakes
- 1 romaine lettuce, shredded
- 1 red onion, cut into thin half-moons
- 400 g of black-eye beans, drained and rinsed
- 1 large of mango, peeled and cut into 1 cm chunks
- 1 large of avocado, cut into chunks
- 1 tsp of ground turmeric
Method
Step 1
Combine the oil, vinegar, honey (or sugar) turmeric and chopped coriander stalks together in a bowl. Season to taste and set aside.Step 2
Take a large platter or four individual plates and add the rest of the ingredients (except the mackerel), building them up to look nice. Then add the flaked mackerel on top.Step 3
Pour the dressing over and serve immediately.
