Smoked Mackerel Pasta Bake

Horseradish and smoked mackerel create a piquant depth of flavour. A crisp green salad would be the perfect accompaniment to this rich and cheesy bake.

Ingredients

  • 300 g of penne pasta
  • 1 tbsp of creamed horseradish
  • 75 g of wholemeal bread, made into coarse crumbs
  • 4 tomatoes, sliced
  • 40 g of mature cheddar, grated
  • 200 g of frozen petit pois peas
  • 150 g of smoked mackerel, skinned and flaked
  • 100 g of creme fraiche

Method

  • Step 1

    Cook the pasta according to the packet instructions, adding the peas for the last 3 minutes. Drain, reserving 75ml of the cooking water.
  • Step 2

    Mix the pasta and peas with the smoked mackerel, crème fraiche, horseradish and the reserved cooking water. Mix and then place in a shallow ovenproof dish.
  • Step 3

    Top with the sliced tomatoes, followed by the breadcrumbs and then sprinkle with the grated cheese.
  • Step 4

    Bake in the preheated oven for 15 minutes until golden and crisp. Season and serve.
