This Smoked Salmon and Avocado Flatbread with Red Onion Pickle and Chilli is a delicious global mash-up of fresh Scandi and Mexican flavours with a chewy Greek-style flatbread base. Ingredients
- 2 greek-style flatbreads
- 1 ripe avocado
- 100g smoked salmon
- 2 tbsp pickled red onion (approx.)
- 1 mild red chilli, finely sliced
Method
Step 1
Heat the flatbreads as per the pack instructions, then leave to cool slightly.Step 2
Peel the avocado, remove the stone and mash the flesh with a fork. Scoop it on to the 2 flatbreads, spreading it out, then top with the smoked salmon, pickled red onion and a scattering of sliced chilli. Cut into bite-size pieces and serve on a platter.
