
Smoked Trout, Watercress and Freekeh Salad

This dish is free and easy – use your
favourite grains. If you prefer smoked mackerel, it will also work well in this
recipe. You could use a ready-made honey mustard dressing as an even quicker alternative.Time and servings

Ingredients
- 120 g of ready-to-eat freekeh
- 1 tbsp of yoghurt
- 0.5 tsp of english mustard
- 60 g of trout fillet
- 0.5 tsp of runny honey
- 1 handful of watercress
Method
Step 1
First mix the dressing together: combine the yogurt, English mustard and runny honey. Season and set aside.Step 2
Flake the smoked trout fillet and carefully combine with ready-to-eat freekeh, sprinkle some watercress on top and drizzle with the dressing. Save the remaining ingredients for the next day’s snack.
