Grilled slices of courgette and aubergine in place of cucumber give a beautifully smoky flavour that's great for barbecues.

Ingredients

  • 4 slices of stale sourdough bread or other bread
  • 7 tbsp of extra virgin olive oil
  • 2 tbsp of red wine vinegar
  • 1 garlic clove
  • 1 courgette, sliced
  • 1 aubergine, sliced
  • 1 medium red onion, finely sliced
  • 6 cherry tomatoes, halved
  • 1 handful of basil leaves, torn

Method

  • Step 1

    Cut the garlic clove in half and rub it into the bread, then tear the bread into bite-sized pieces.
  • Step 2

    Toss the aubergine and courgette slices with 3 tbsp of olive oil, season and then grill using a griddle pan.
  • Step 3

    Combine all the ingredients with 4 tbsp olive oil and the red wine vinegar, then toss and serve.
