
Smoky Panzanella Salad

Grilled slices of courgette and aubergine in place of cucumber give a beautifully smoky flavour that's great for barbecues.Time and servings

Ingredients
- 4 slices of stale sourdough bread or other bread
- 7 tbsp of extra virgin olive oil
- 2 tbsp of red wine vinegar
- 1 garlic clove
- 1 courgette, sliced
- 1 aubergine, sliced
- 1 medium red onion, finely sliced
- 6 cherry tomatoes, halved
- 1 handful of basil leaves, torn
Method
Step 1
Cut the garlic clove in half and rub it into the bread, then tear the bread into bite-sized pieces.Step 2
Toss the aubergine and courgette slices with 3 tbsp of olive oil, season and then grill using a griddle pan.Step 3
Combine all the ingredients with 4 tbsp olive oil and the red wine vinegar, then toss and serve.
