
Smoky Potatoes

Every barbecue needs a filling and fabulous side dish and these Smoky Potatoes from food writer and live-fire enthusiast Helen Graves fit the bill. They’re pre-cooked on the hob but finished over the coals, which results in crackly, smoky skins with beautifully fluffy centres. A final sprinkle of crunchy sea salt will bring the flavour alive. Ingredients
- 500 g of baby new potatoes
- 1 drizzle of extra virgin olive oil (optional)
- 1 sprinkle of of sea salt flakes
Method
Step 1
Parboil the potatoes in a large pan of boiling salted water for 5 mins, then drain and pat dry.Step 2
Grill/griddle on high for 15-20 mins, turning, until tender and lightly charred. Dress with a little oil and a sprinkling of sea salt, if you like.
