Smoky Tomato Soup with Garlicky Croutons

Budget-friendly and quick to make, this warming tomato soup recipe is a real food cupboard favourite. Make your own croutons, too, for extra texture and substance. With just a few simple ingredients, you can create a homemade soup flavoured with smoky paprika – omit the chilli flakes if cooking for kids.

Ingredients

  • 1 clove of garlic, crushed
  • 1 tbsp of olive oil
  • 1 slice of white bread
  • 400 g of chopped tomatoes
  • 0.5 tsp of smoked paprika
  • 1 pinch of chilli flakes
  • 100 ml of vegetable stock
  • 1 tbsp of single cream

Method

  • Step 1

    Preheat oven to 200°C/180°C fan/gas 6. Mix the crushed garlic and olive oil together in a bowl.
  • Step 2

    Chop the bread into bite-size pieces and toss in the oil. Place on a baking tray and toast in the oven for 10-15 mins until golden.
  • Step 3

    Meanwhile, simmer the chopped tomatoes with the vegetable stock, smoked paprika and chilli flakes for 10 mins.
  • Step 4

    Using a hand blender, whizz until smooth and pour into a bowl to serve.
  • Step 5

    Swirl the cream through, plus an extra drizzle of oil, a twist of black pepper, and top with the finished croutons.
