
Smoky Vegan Burger

Smoky and full of flavour, this meatless burger makes a great dinner or lunch. A delicious combination of fluffy burger buns, Beyond Meat patties and maple-flavoured butternut squash, this recipe is proof that delicious food doesn’t always have to be served in a bowl. Ingredients
- 0.5 butternut squash, deseeded and thickly sliced
- 2 tbsp of olive oil, plus extra to brush
- 2 tbsp of maple syrup
- 4 tbsp of plant-based mayonnaise
- 1 tsp of smoked paprika
- 1 lemon, juiced
- 12 small portobello mushrooms, stalks removed
- 4 beyond meat burgers
- 4 burger buns
- 1 small handful of rocket
- 1 drizzle of smoked hot sauce
Method
Step 1
To make the maple butternut squash, preheat the oven to 200ºC/180ºC/gas mark 6. Place the squash slices on a baking tray and brush with a little olive oil. Season with salt and pepper and roast for 20 mins. Remove from the oven and brush with the maple syrup, then return to the oven to roast for a further 5-10 mins.Step 2
Mix the plant-based mayo with the smoked paprika and a squeeze of lemon juice. Set aside.Step 3
When you are ready to serve, heat a grill pan to medium-high. Brush the mushrooms and burgers with a little oil, cook for 4-5 mins on each side, or until cooked through.Step 4
When the burgers and mushrooms are ready, place the burger on top of the squash then top with the mushrooms. Drizzle over a little smoked hot sauce and serve with the top of the bun.
