
Snow-dusted Mini Choco-coconut Rice Cakes

Jazz up this classic snack to fit in with your winter wonderland-themed lunchbox. Melted white chocolate is drizzled over Kallo mini choco-coconut rice cakes and dusted with ‘snow’ in the form of blue and white sprinkles. You could prep a bunch of these on a Monday and use them for lunchboxes all week long. Ingredients
- 15 g of white chocolate, broken into pieces
- 4 chocolate rice cakes
- 1 tsp of blue and white sprinkles
Method
Step 1
Melt the white chocolate in a microwave-safe bowl in 10-second bursts until fully melted. Use a teaspoon to drizzle the melted chocolate over the 4 rice cakes and then sprinkle over the teaspoon of sprinkles, ensuring they stick to the melted chocolate.Step 2
Leave rice cakes to set for 10 mins before packing into the lunchbox (or pop them into the freezer on a small plate to speed up the process). Come lunchtime, your little one will feel like they’ve stepped into a winter wonderland.
