If you like piña coladas, this Soft-Serve Pineapple Whip with Toasted Coconut from food stylist and recipe developer Kristine Jakobsson is for you. “It’s holiday vibes all round with this booze-free spin on the classic cocktail,” says Kristine. If you want to switch it up with a subtle boozy twist for the adults, add 25ml coconut rum. The recipe serves 2 generously, or 4 for smaller servings. Looking for more ways to keep cool? Ingredients

  • 250g frozen pineapple chunks
  • 1 tsp soft light brown sugar
  • ½ tsp vegetable oil
  • 90g frozen sliced bananas
  • 125ml condensed milk
  • 1 lime, zested, ½ juiced
  • 2 tbsp toasted coconut chips (approx.)

Method

  • Step 1

Put 100g frozen pineapple in a colander and leave to defrost in the sink, then toss in a bowl with the sugar.
  • Step 2

In a small non-stick pan, heat the oil over a medium-high heat. Add the pineapple; cook for 2 mins on each side. Remove the caramelised fruit to a plate to cool.
  • Step 3

Add the remaining 150g frozen pineapple to a high-speed blender, along with the frozen bananas, condensed milk, lime zest and juice. Blitz until smooth. Divide between serving glasses; top with the caramelised pineapple and a few toasted coconut chips.
