Ingredients
- 250g frozen pineapple chunks
- 1 tsp soft light brown sugar
- ½ tsp vegetable oil
- 90g frozen sliced bananas
- 125ml condensed milk
- 1 lime, zested, ½ juiced
- 2 tbsp toasted coconut chips (approx.)
Method
Step 1
Put 100g frozen pineapple in a colander and leave to defrost in the sink, then toss in a bowl with the sugar.Step 2
In a small non-stick pan, heat the oil over a medium-high heat. Add the pineapple; cook for 2 mins on each side. Remove the caramelised fruit to a plate to cool.Step 3
Add the remaining 150g frozen pineapple to a high-speed blender, along with the frozen bananas, condensed milk, lime zest and juice. Blitz until smooth. Divide between serving glasses; top with the caramelised pineapple and a few toasted coconut chips.
