
Sour Cherry Dark and Stormy Cocktail

A tart-sweet spin on a classic with lots of warming spice, this Sour Cherry Dark and Stormy Cocktail was created by bar owner and consultant Ryan Chetiyawardana – aka Mr Lyan. The cocktail base is a delectable mix of golden rum, dry sherry and sour cherry molasses, and this recipe makes a 70cl bottle of it – enough to create around 10 drinks. For easy storage and pouring, use a clean, empty wine bottle and a funnel. Time and servings

Ingredients
- 400ml golden rum
- 100ml dry sherry
- 25ml sour cherry molasses
- 150ml ginger beer (approx.)
- 3 cocktail cherries (approx.), to garnish
- 1 rosemary sprig, to garnish
Method
Step 1
In a jug, mix the rum, sherry and sour cherry molasses. Pour into a clean 70cl bottle and chill.Step 2
To make the cocktail, pour 50ml of the rum mix into a highball glass filled with ice cubes. Stir, add more ice, then top up with ginger beer and stir again.Step 3
Garnish with cocktail cherries on a stick and a rosemary sprig.
