Top tip alert from our friends at Mak Tok, who created this vegan recipe: easy-to-make Malaysian shaved ice is perfect for a light dessert or a pleasing palette cleanser between courses. We think it'll go down a storm at a dinner party on a hot day – just multiply the quantity depending on how many guests you're having over. It's a great way to use up any summer berries you have growing in the garden, too.

Ingredients

  • 1 scoop of dairy-free vanilla ice cream
  • 400 ml of sweetened soy milk
  • 5 strawberries, hulled and sliced in half
  • 10 blueberries
  • 30 g of flaked almonds
  • 1 tbsp of golden syrup
  • 3 mint leaves, to garnsih

Method

  • Step 1

    Freeze the soy milk overnight.
  • Step 2

    Shave the soy milk into a bowl using a grater. Add the strawberries, blueberries and flaked almonds and top with a scoop of ice cream.
  • Step 3

    Drizzle with golden syrup and garnish with mint leaves. Serve immediately.
