
Spaghetti Bolognese alla Poulet

Children just adore this adapted version of Spaghetti Bolognese made with chicken, but luckily it is also a favourite with adults too.Time and servings

Ingredients
- 2 tins of chopped tomatoes in juice
- 3 tbsp of soya sauce
- 3 tbsp of worcestershire sauce
- 1 dash of lemon juice
- 0.5 tsp of paprika
- 4 cloves of garlic
- 1 chicken stock cube
- 20 ml of extra virgin olive oil
- 2 chicken breast fillets
- 2 onions
- 1 handful of basil
- 0.75 packet of spaghetti
- 1 tsp of mixed herbs
- 10 chestnut mushrooms
Method
Step 1
Roughly chop the chicken and transfer to a food processor. Whizz very briefly to mince the chicken and set to one side. Chop the onions, garlic and then add to a well oiled frying pan and cook slowly until the onions have started to soften.Step 2
Add the mushrooms and continue to maintain a medium heat so as not to overcook the garlic. Move the onions, garlic and mushrooms to one side of the pan and add the chicken. Turn continuously until it has cooked and started to break up, then mix in with the onions etc.Step 3
Add the lemon juice, stock cube, mixed herbs, paprika, Worcestershire sauce and tamari and continue to stir well. Add the tomatoes, mix well and then turn down the heat to let the flavours absorb while the spaghetti is cooking.Step 4
Finally season to taste and add the fresh basil. Serve generous helpings on top of the spaghetti, garnish with more basil and sprinkle with parmesan to taste.
