Spaghetti with meatballs and asparagus

Ingredients

  • 1 jar of seeds of change® mediterranean vegetable sauce
  • 1 bunch of asparagus, chopped into 4cm batons
  • 25 g of butter
  • 2 tbsp of sage, chopped
  • 2 tsp of parmesan cheese, grated
  • 2 cloves of garlic
  • 2 tablespoons of vegetable oil
  • 500 g of spaghetti
  • 600 g of meatballs

Method

  • Step 1

    Add the meatballs to a hot medium sized frying pan with the vegetable oil.
  • Step 2

    Add the chopped garlic and sage followed by the asparagus and stir for 5 minutes.
  • Step 3

    Next add a little bit of butter and add the Seeds of Change Mediterranean Vegetable sauce.
  • Step 4

    Cover and simmer gently for 15 minutes until the meatballs are cooked through.
  • Step 5

    Meanwhile, cook the Seeds of Change Spaghetti in boiling water until al dente, drain and mix with the sauce.
  • Step 6

    Plate and serve with grated parmesan.
