Spaghetti with Rocket and Lemon

Ingredients

  • 4 tbsp of extra virgin olive oil
  • 1 fresh red chilli
  • 250 g of fresh spaghetti
  • 1 clove of garlic
  • 100 g of wild rocket
  • 0.5 lemon, just the zest
  • 50 g of parmigiano reggiano

Method

  • Step 1

    Wash and spin-dry the rocket.
  • Step 2

    Finely mince the garlic and chilli.
  • Step 3

    Heat the olive oil in a large skillet. When hot, add the garlic and chilli and fry gently over low heat until fragrant.
  • Step 4

    In the meantime, bring a large pot of water to the boil. Add a handful of rock salt.
  • Step 5

    When boiling rapidly, lower the pasta.
  • Step 6

    Cook for 3 minutes, then drain quickly.
  • Step 7

    Transfer the pasta into the skillet with the chilli and garlic. Add the rocket.
  • Step 8

    Stir fry over medium-high heat until the rocket has barely wilted, about 1 minute. Season to taste with salt and black pepper.
  • Step 9

    Serve immediately with generous grated parmesan cheese and a bit of grated lemon zest.
