
Spaghetti with Rocket and Lemon

Ingredients
- 4 tbsp of extra virgin olive oil
- 1 fresh red chilli
- 250 g of fresh spaghetti
- 1 clove of garlic
- 100 g of wild rocket
- 0.5 lemon, just the zest
- 50 g of parmigiano reggiano
Method
Step 1
Wash and spin-dry the rocket.Step 2
Finely mince the garlic and chilli.Step 3
Heat the olive oil in a large skillet. When hot, add the garlic and chilli and fry gently over low heat until fragrant.Step 4
In the meantime, bring a large pot of water to the boil. Add a handful of rock salt.Step 5
When boiling rapidly, lower the pasta.Step 6
Cook for 3 minutes, then drain quickly.Step 7
Transfer the pasta into the skillet with the chilli and garlic. Add the rocket.Step 8
Stir fry over medium-high heat until the rocket has barely wilted, about 1 minute. Season to taste with salt and black pepper.Step 9
Serve immediately with generous grated parmesan cheese and a bit of grated lemon zest.
