
Spaghetti with tomato pesto, chilli, garlic and lemon

This
simple pasta dish makes for a great health mid-week meal that the whole family
can enjoy together. If your children don’t like spicy food then adjust the
chilli to your own preference.Time and servings

Ingredients
- 340 g of spaghetti
- 1 olive oil spray
- 4 cloves of garlic, crushed
- 3 tbsp of sacla' reduced fat tomato pesto
- 1 lemon, juice and 1.5tbsp zest
- 2 tbsp of chilli, chopped
- 2 tbsp of fresh parsley, chopped
- 0.5 tsp of reduced salt bouillon
- 20 g of parmesan cheese, grated
- 1 handful of fresh basil, to garnish
Method
Step 1
Cook spaghetti according to pack instructions and drain, saving some of the cooking water.Step 2
Meanwhile, spray a small pan with olive oil spray. Add the garlic and cook for 2 minutes, stirring so that it does not burn.Step 3
Stir in the Pesto, lemon zest, chilli, parsley and lemon juice.Step 4
In a bowl, combine the drained spaghetti and Pesto mix and season with the bouillon and black pepper.Step 5
Serve topped with Parmesan and garnish with basil.
