
Spam Fried Rice with Crispy Chilli Oil

“This Spam Fried Rice with Crispy Chilli Oil is a weeknight comfort meal and a great way to use up leftover rice,” says cook and hosting influencer Saff Michaelis. “The crispy chilli oil does a lot of the flavour heavy lifting, while the Spam adds a delicious salty bite.”

Ingredients
- 1 tsp vegetable oil
- 100g Spam, drained and diced
- 2 salad onions, white parts finely sliced, green parts diagonally sliced
- 1 tbsp ginger and garlic paste
- 250g cooked rice
- 160g mixed frozen peas and sweetcorn
- 1 tbsp soy sauce
- 1 tsp fish sauce
- ½ tsp MSG
- 2 tsp crispy chilli oil, plus extra to serve
- 2 medium eggs
Method
Step 1
Heat the oil in a wok or large pan over medium-high heat. Add the Spam and stir-fry for 5-10 mins, stirring occasionally, until golden all over.Step 2
Add the whites of the salad onions, cook for 1-2 mins, then stir in the ginger and garlic paste and cook for a further 30 secs until fragrant. Add the rice and frozen peas and sweetcorn, and cook for 1 min, breaking up any clumps.Step 3
Toss in the soy sauce, fish sauce and MSG; stir-fry for 1 min more.Step 4
Meanwhile, heat the crispy chilli oil in another pan over medium heat and fry the eggs to your liking.Step 5
To serve, spoon the rice into bowls and top each with a fried egg and the green salad onions. Finish with an extra dollop of chilli oil.
