Spam Fried Rice with Crispy Chilli Oil

Ingredients

  • 1 tsp vegetable oil
  • 100g Spam, drained and diced
  • 2 salad onions, white parts finely sliced, green parts diagonally sliced
  • 1 tbsp ginger and garlic paste
  • 250g cooked rice
  • 160g mixed frozen peas and sweetcorn
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • ½ tsp MSG
  • 2 tsp crispy chilli oil, plus extra to serve
  • 2 medium eggs

Method

  • Step 1

    Heat the oil in a wok or large pan over medium-high heat. Add the Spam and stir-fry for 5-10 mins, stirring occasionally, until golden all over.
  • Step 2

    Add the whites of the salad onions, cook for 1-2 mins, then stir in the ginger and garlic paste and cook for a further 30 secs until fragrant. Add the rice and frozen peas and sweetcorn, and cook for 1 min, breaking up any clumps.
  • Step 3

    Toss in the soy sauce, fish sauce and MSG; stir-fry for 1 min more.
  • Step 4

    Meanwhile, heat the crispy chilli oil in another pan over medium heat and fry the eggs to your liking.
  • Step 5

    To serve, spoon the rice into bowls and top each with a fried egg and the green salad onions. Finish with an extra dollop of chilli oil.
