Sparkling Strawberry and Peach Sangria

I’ve used yellow peaches, but other types work just as well.”

Ingredients

  • 3 peaches, chopped into 2 cm pieces
  • 150g caster sugar
  • 1 cinnamon stick
  • 8 black peppercorns
  • 1 (227g) pack strawberries, hulled and sliced
  • 150ml brandy
  • 2 bottles cava brut

Method

  • Step 1

    Put the peaches, sugar, cinnamon stick and peppercorns in a saucepan with 150ml water. Bring to the boil, simmer for 1 min, then remove from the heat. Stir in the strawberries and brandy; chill for 1 hr.

  • Step 2

    To serve, fill a large jug with ice, add half the chilled fruit syrup and top up with cava. Give it a stir and pour into glasses. Top up the jug as needed with more syrup and cava.
