
Spelt and Avocado Za’atar Salad

Perfect for making ahead – add the avocados just before serving for optimal freshness. Spelt is an ancient grain with a sweet, nutty chewiness. It works really well in salads and tastes especially good alongside cherry tomatoes. Add sesame seeds and radish coins for extra crunch.Time and servings

Ingredients
- 200 g of pearled spelt
- 24 cherry tomatoes, halved
- 8 radishes, thinly sliced
- 2 avocados, stoned, peeled and sliced
- 3 tsp of sesame seeds, toasted, 1 tsp to garnish
- 3 tsp of za’atar, 1 tsp to garnish
- 1 red onion, small, thinly sliced
- 20 g of dill, finely chopped
- 0.5 lemon, juice of
- 1.5 tbsp of extra virgin olive oil
- 1 tbsp of honey
Method
Step 1
Bring the spelt to the boil in a small pan with plenty of water, then turn down to simmer for 15 mins, until al dente. Drain into a sieve and run under the cold tap to cool.Step 2
Tip the spelt into a large bowl and add the veg and dill.Step 3
Mix the dressing (2 tsp sesame seeds, 2 tsp za’atar, juice of ½ lemon, extra virgin olive oil and honey) in a small bowl, then toss it well through the spelt mixture.Step 4
Lay out on a large plate and garnish with the rest of the sesame seeds and za’atar.
