
Spiced Bramble

“Making a base syrup using fruit and a complementary spice is the secret to upping your cocktail game,” say chefs Sarit Packer and Itamar Srulovich – founders of London-based restaurant Honey & Co. – who created this sensational Spiced Bramble. “Then, when your guests arrive, just add alcohol, ice and sparkling water. It’s a trick that keeps on giving – if you like this, try strawberries with vanilla, apricots with cardamom, and plums with cloves; all quite delicious!”Time and servings

Ingredients
- 3 tbsp sugar
- 100g blackberries, plus 4 to decorate
- 1 star anise
- 1 tbsp sherry vinegar
- 200ml 200ml gin
- 1 bottle sparkling water, to top up
- 5 tarragon leaves (approx.), optional
Method
Step 1
Chill 4 tall glasses. To make the syrup, heat the sugar in a small pan on a medium-high heat until melted.Step 2
Gently muddle in the 100g blackberries and star anise. Add the vinegar and simmer on low for 2 mins.Step 3
Remove from the heat. Cool completely; discard the star anise.Step 4
Pour the gin and syrup into a big jug. Add lots of crushed ice; top up with sparkling water and stir well. Serve in the glasses, finished with tarragon, if using, and a blackberry.
