
Ingredients
- 1 avocado, flesh scooped out
- 250g Greek-style yoghurt
- 1 lime, juiced, plus a splash
- 1 tbsp olive oil, plus 2 tsp
- 2 corn-on-the-cobs, kernels sliced off
- 500g chicken mince
- 1 tsp fajita seasoning
- 20g unsalted butter
- 2 tsp Tajín seasoning
- 4 eggs
- 1 handful coriander, leaves picked
- 4 warmed corn tacos, to serve (optional)
Method
Step 1
In a food processor, blitz the avocado and yoghurt with the juice of ½ lime and some seasoning until smooth. Set aside. Bring a pan of water to the boil for the eggs, then reduce to a gentle simmer.Step 2
Heat 1 tbsp oil in a large pan and fry the corn kernels over medium-high heat for 10 mins (approx.) until toasted and golden. Remove to a plate and cover with foil to keep warm.Step 3
Add 1 tsp oil to the same pan and cook the chicken mince for 5 mins, breaking it up as you go. Add the fajita seasoning, plus a little salt and pepper, and cook for a further 5 mins until golden. Squeeze over the juice of ½ lime.Step 4
Meanwhile, gently melt the butter in a small pan until just starting to brown. Remove from the heat; stir in the remaining 1 tsp oil and the Tajín.Step 5
Poach the eggs in the simmering water with a splash of lime juice for 3 mins, until the whites are just set.Step 6
Spoon the avocado yoghurt onto plates and top with the chicken, toasted corn and a poached egg. Drizzle over the Tajín butter, scatter with coriander leaves and serve straight away with warm tacos, if you like.
